Pretty hard to logically create that. But what I do want to be real is that regional variant of sudowoodo that looks on fire and is grass type. That would be fine with me

Unironically pepper if you want the easy route. Or any other spicy plant.
Alternatively a forest fire mon, another jack-o-lantern could work well, or maybe another sunflower that takes more inspiration from its sun theme. A tiki pokemon could also pull it off, same with a campfire.

Volcanic vents are a very real thing. But there are not instances of plants or flora living in any level of harmony with fire. With I guess a technical exception to the burning bush but its a stretch

I think people forget that Pokemon can actually be creative and don't need a highly specific 1:1 basis to "logically justify" a typing.

Gamefreak will probably release some grass lizard that happens to breathe fire as well, or a regional variant of some older fire or grass mon, not a stupid forced pepper thing.
