Psychic/Poison was the last Psychic type combo. Now Psychic is with Flying and Water as one of the types that's been paired with every other type. The only unused combos left are:

I can see why a lot of these haven't been used yet - they'll fucking suck.

Maybe Normal/Steel will be usable. I mean, Obstagoon and Bisharp have the same 4x weaknesses and they're just fine.

Normal/Ice will suck so much that if it were a thing it would evolve to ditch the normal-typing.

This gen has very clearly given pure types to Pokemon that could've had them so that they could give them to legendaries or events (See: Grapploct and the new fighting/water, or Sirfetch'd, and Galar Zapdos)

As to which combos would be likely the last added, it has to be some of the Normal ones. Normal/Bug or Normal/Steel being good bets.
As to the ones I want the most:

Literally all of these are terrible ideas. There's nothing about them that conveys the idea of a normal type, it's the shitty nuPokemon philosophy of taking a Pokemon that would be pure type of whatever it is normally, and slapping Normal on it. It's dumb and makes the concept of a Normal dual typing dumb too.

Normal often represents an innate lack of leaning towards any specific element in terms of what the Pokemon is made of. It's the neutral type, the worldly type, and the simple type. Outside of Normal/Flying for birds, since Flying in itself is a unique type where there's not really many pure types of it, Normal as a dual type should only be given out when there's an extremely good reason to do so.

Girafarig is a great and classic example, as one of the first. It's a weird giraffe okapi thing at complete odds with itself. One half of itself is natural and mundane, while the other half is warped and twisted. It justifies this typing well.

If a Pokemon is going to be Normal/X, there needs to be something very strong and noteworthy about its design to justify the Normal typing along with another. If there isn't anything, just give it the other typing as a pure type.

This is why I think Eiscue would have been a good Normal/Ice type. Its body is just a regular, plain, cartoon literally my mom’s penguin and its head has the giant ice cube, and ice cubes themselves are pretty mundane and “normal.”

I had a lot of terrible ideas but I think a roly-poly conforms to your description. I also think that while Normal types have been used in the past for plain animals that should be shaken up. Normal type can't be the domain solely of birds, rodents, cats, and other animals. It needs shaking up in my opinion. I know many people hate objectmons but I think they would make some great normal type pokemon.

Honestly I thought Rolypoly was the weakest one (the beaker was probably the closest I would say to possibly being workable) since I just don't see why one would be a Normal type. Admittedly, a Normal/Bug type I think would be the hardest of the normal subtypes to develop.

I think for Normal/Bug, the only two viable ideas to go with is some parasite-ridden mammal like an opposum which could lead to interesting ideas about it either being controlled by or cooperating with its parasite(s). Another idea that's more off the wall could be making an alien-like Pokemon, as aliens and bugs often go hand-in-hand in many close encounters (bug-eyed men, mothman, etc). A Normal/Bug typing could be used for it to convey just how weird and otherworldly it is (after all, it's normal, just not to our world). This would probably be a much more radical interpretation of the type.

You're right in that Normal is often relegated to the early mammal type, and it shouldn't be. But it should be done along the lines of mons like Lickitung and Kecleon, not just giving Normal to whatever.

For a traditional bug, I’d say the best bet would be a housefly for normal/bug. Flies are extremely common in both real life and media. Give it a sleek basic bug body and maybe some brown, grey, or white “fur” and it could work really well.

Otherwise I see a bug/normal type not a normal animal with parasites (that’d be too weird, are the parasites pokemon?), but instead a normal animal that has arthropod anatomy. Like a spider monkey pokemon, based on the real monkey, but also is a literal spider... monkey.

I think a gray would be a great normal-type but not bug. Kecleon is just a chameleon. I think Lickitung is one of those pokemon that they designed and then had to force a type onto. The more I think about it the more fucked up normal type is. At the start of the series it was the default type for things that didn't fit anything else. That is why there are so many missing original dual types. The entire type needs a reboot. It's a vestigial type.

Kinda disappointed this was the first Poison/Psychic, I mean I dunno what I expected but this is pretty underwhelming especially since the Poison-Type doesn't really make much sense since Shellder isn't Poison-Type and so the type just seems to randomly manifest. If the theory that Slowking will have a Mareanie/Toxapex instead then I could probably get behind that being Poison/Psychic since at least that would look more interesting.

I have the idea that it lives in a box sort of like a turtles shell, so limbs stick out and maybe the head only coming out when attacking, otherwise its hiding in the box so you don't know if its alive or dead. And when it does pop out its got a ghostly outline kinda glow.

Lots of pokemon are dark type simply out of being ferocious or voracious. Mega Gyarados, Tyranitar, Mightyena, Hydreigon and Guzzlord to name a few
