Why couldn't they have a few episodes before ash turned back? Why couldn't they start the episode with ash getting transformed and then collect ingredients to turn him back? Anything to see ash as a pikachu for more then a minute.

Because the episodes are written by multiple people on rotation. Would have been difficult to have anything more complex than "turns into a person at the beginning of the next episode".

This character needs more love. She has some vocal fans here on /vp/ but the Japanese really don't seem to get too excited about her like myself and some others in the Pokemon anime threads.
