Most of my competitive Pokémon are barely past 50 so it shouldn’t be a problem. Question is do I mix it up along the way or not...

I stopped playing after I completed the dex, so my story team didn't get much further than level 72. There's little reason to assume the DLC is going to need fully EV trained mons with max IVs to beat.
