They would obviously still be Pikachu and Eevee, starters in the let's go games will never evolve and they'll probably follow some naming convention like Let's Go! To Johto Pikachu and Let's Go! To Sinnoh Eevee etc

Starters in Let’s Go style Johto games would be Chikorita, Cyndaquil and Totodile because it would be a remake of Crystal just like LGPE was a remake of Yellow where the starting pokémon were Pikachu for you and Eevee for your rival.

The purpose of Let’s Go was being a remake/sequel to Yellow (which is where the starters come from) with PoGo catching mechanics.

Let’s Go Johto would be likely a remake of Crystal. What starters did Crystal have again?

It happens that way for kanto lets go because it is a remake of yellow, which feature the starter as the box pokemon. So a remake of that using pikachu and add in eevee as the starter make sense. But no other gen do this. All other gen feature legendary for box mon and you pick the standard 3 starter>>43891414
