I've never played Gen 5 before, what's the best way to go about doing it? Should I play the original, or Volt White? Or is there another hack that could give an even better experience?

Play BW1, then BW2. The Unova experience should in my opinion be played as is - only having new Pokemon really changed the feel of the game. With BW2 you get the best of both worlds - having played the original, you get a more fleshed out and traditional style Pokemon game that continues the story GSC style. I really think these games work best when played as originally intended.
