Dark Type does represent darkness but it is not the Darkness Type.

Ghost is where all the shadow-control abilities go. The reason Dark Type is associated with darkness is because it is playing off the trope of Evil Is Black. It is mainly the Evil Type but dark themes are mixed in there because of the strong association darkness and evil have with each other.

castform physically looks like a human head, very mammal like. you could also argue its "type" is based on migratory birds whose flight patterns are based on weather. so again, bird.
