They never fought the Champion because that would first require them to get through the Elite Four. Galar has no Elite Four, it's just a tournament.

That’s Bede and he’s not obsessed over Charizard. He’s a big fan of Rose. Bea wanted to beat Leon, not Charizard in particular. And Hop wants to beat his brother like in the game which means the anime is faithful. GMax Charizard is powerful and an end game reward so it makes sense to have a focus on it anyway.
