I mean, pretty much all octopuses, we call "something" octopus, or for bears "something" bear. There are things we don't differentiate either, like how Spanish divides "búho" and "lechuza" for different types of owls, whereas they're all owls in English.
You're right about hedgehog in Jap, but salamander is different from dragon, and fox is different from dog. A further example would be how we call Tanuki raccoon dogs, but the Japs have their own specific word for it separate from dog. There's also アヒル vs 鴨, which in English is just a duck. There are umbrella words used liberally, but to say this is a specifically Japanese thing, or that it is a relatively very "simplistic" naming convention, or that
