Fighting and Ghost are probably the only types that have a coherent idea behind them, so their designs are much better
They don't fall into the traps of things like Fire and Electric that are 99% just 'regular animal painted red/orange/yellow'
And there's plenty to 'do with it'. There are tons of fighting styles they can base Pokemon around. There's really nothing similar about the likes of Hawlucha, Breloom and Poliwrath but they all feel like they belong to the same type regardless.
