The organisms most suited to survival are the ones who can adapt, who can be placed in different environments and still thrive. If you forced a Fire Type to live in a tundra they'd probably just die. A Normal Type would not be in an ideal environment but they would still likely find a way of surviving there.
Since Normal is the Type of adaptability, it is the most populated Type only after Water, which say nothing of Water Types and say more about the planet which happens to be filled to the brim with water. But Normal are the real survivors. Since they are so successfully prolific, we call them "normal".
Basically they won the game of life, took over, and now are so common that people see them frequently and come to think of them as "normal". Normal Types are not thought to be miraculous, yet they are.
