Mind over matter factoring into the Psychic weakness is certainly a part of it, but don't forget that in Gen I the Psychic type is said to be newly discovered compared to the others, which is why the Dojo was Saffron Gym until Sabrina rolled in and wrecked their shit. So Psychic kind of represented "progress" in the way that Japan before the asset bubble popped was progressing away from traditions and into modernity (at least in the eyes of some). In the same way, Psychic is the superiority of the mind (people, progress), while one of Poison's motifs is pollution (Grimer, Koffing); modern people will utilize their minds to solve issues of the past such as pollution in the same way they moved past a need for skilled martial artists.
Poison and Psychic were opposed types in Gen I just as much as Dark and Psychic, which is seen in the other motifs of the type:

>Oddish, Bellsprout lines"Evil" plants. Oddish are weeds, become Vileplume, which has a look of malice and dark colors. They poison gardens etc. Bellsprout become venus fly traps, a predator plant.
>Grimer, Koffing linesPollution, a phenomenon caused by the evils of people. Grimer comes from toxic waste dumps and Koffing are exploding balls of smog.
>Gastly lineGastly is a ball of poisonous gas, becomes the malicious ghost Gengar which seeks to enter the physical plane. Ghost is later made into a not-necessarily evil type, the dual typing factors into the theme of them hiding in the shadows after becoming corporeal.
>Zubat/GolbatVenom, Golbat is a literal vampire bat that lives in dark caves.
>Nidos, bug/posions, Ekans lineLiterally venom. Arbok is said to be vengeful, going back to the "evil" theme.
