I play Pokemon Yellow once a year and my team is Pikachu, Pidgeot, Venusaur, Charizard, Blastoise and Snorlax every time

I also play Blue every now and then with Pokemon I've never used before, although I'm slowly running out of options

Assuming your asking about the means, VC is the most convenient and allows for transferring, should one be so inclined. I pray that one day the Switch gets Gens 1-2 with Home compatibility (and if I'm feeling extra greedy, non-local trading and battling).

Unironically Yellow, but boxing Pikachu.
Building a team with jank Gen 1 mechanics and limitations in mind is fun in itself.
I still like FRLG though. Also I'm not touching Let's Go with a 10 foot pole.

It's fine, just should have never tried to market itself as a mainline game. It's really just a heavily glorified (by marketing) spinoff that exists to pull in people who have only played Go. It does it's job fine enough, and really isn't worth crying about nearly two years down the line.

Playing it on the N64 and then taking your team into Stadium's gym leader castle/Stadium

There is no better way and forces you to actually use what you learned with decent rewards for beating the stadium bits like starters or fossils.
