People like to complain about "Counter the Counter!" too, but moves have been shown to be use differently between different Pokemon. For example, Wobbuffet uses Counter like a skin-surface shield that pushes back foes that come into direct contact, but Lycanroc Dusk uses Counter as a parry move. Parries can be parried themselves.
The only TRUE asspull I remember from SM was "Jump on the electricity to climb the Hurricane!".
