The hunt, dumbass. The challenge to fill the Pokedex is there, slogan or not. So you figure out where all of the Pokemon are, how all of the new ones evolve, whether they can breed babies or have alternate forms, and you set out to catch'em all. Along the way, you raise a bunch, giving you some firsthand understanding of what kinds of moves they learn, and with each new one you add to your collection you unlock a Pokedex entry.
Heck, in previous generations, I followed up completing the 'dex by using all of the collected Pokemon as breeding stock so I could play around with trying to make some interesting teams, which gave me some fun battles with people.
