Playing Sapphire for the first time
I can't find any information of this online so I'm asking here
Does the species of the Pokemon matter?
For example, if I take an Armaldo to a cuteness contest, will it matter that Armaldo isn't typically considered cute? As opposed to something like Lopunny?

Nope. Species plays absolutely no role in determining the contest attributes of a Pokemon outside of the moves it can use. By default, all Pokemon perform at the same level within contests, but will improve their output by being fed the respective Pokeblocks for that contest type and being taught moves that perform optimally for the aforementioned entry. An Armaldo and a Lopunny with a precisely shared moveset each have the same chance of winning a ribbon, but an Armaldo fed one or two pink Pokeblocks and taught a series of high scoring "Cute" moves such as Water Gun or Mud Sport will boast a dramatically superior chance, even if the Lop shares the moveset. The success of these stat progressions are also entirely based on your ability to accrue and mix the right berries into the optimal block levels and conditions.

Perfect, I got an Anorith with Water Gun and Mud Sport, I'm doing a Nuzlocke and I got bored of mindlessly grinding levels, so I wanted to try my luck at the contest hall.
What other moves would you suggest putting on Anorith? I was looking at his movepool and it's very lacking.
Would Mud Sport - Water Sport spam be enough?

In ORAS, my Gardevoir just spammed Shadow Ball and Psychic and won the Master rank

I'm not familiar with the contest-respective changes from Generation III to VI, but I am aware that spamming moves tends to result in lower returns. For moves, Water Gun, Mud Sport, Protect (for resisting jams when in first place) and possibly Hyper Beam for 4-point scoring and jamming to be ideally used on the final turn, assuming you aren't in first or second placement for that turn. The first two can be used interchangeably until Protect is deemed potentially necessary. As a rule of thumb, you'll want a Pokemon whose flavor preferences are also in line with the color of Block you want to match with its contest stat (likes it sour, feed it yellow blocks for toughness, etc,.) which is the only truly random aspect of forming a high-end performer. A maxed out Cuteness Pokemon wont be exerting much effort for the first two ranks until Hypers, anyway. But I presume you're already aware of most of that.

It all just seems like such a headache, most of this is stuff I already knew but if it's similar to gen 6 then I should do fine.
I know spamming is bad, I was talking about chaining two moves and doing just that for the entire contest.

Like in my Gardevoir example, I would go:
Psychic>Shadow Ball>Psychic>Shadow Ball>Psychic
and win against that girl with a Mega Altaria

That same Gardevoir proceeded to win all ranks, a true hero.

You mentioned flavors and natures, and looking into it I got worried.
My Agorith is Lonely, meaning he likes Spicy and will raise Coolness easier, that I understand.
But do natures have an effect further than training attributes?

Bottom lines (tl;dr):
Will a Lonely Anorith have a hard time in toughness contest?

Is chaining two moves an effective strategy?

Sorry for the late reply, but yes, chaining will usually get you along just fine to Hyper Rank, but Master Rank pretty much demands focus and tactics depending on what place you take for each round. Finally, a Pokemon's block color preferences will not effect how well it'll perform; that's determined by its current level in any of the five respective contest rubrics. Instead, it'll simply determine how many more blocks you'll need to feed them depending on whether or not they like/dislike the flavor you want them to have. Also no, natures do not effect any of this in any meaningful way besides the animation the Pokemon performs when feeding them. Just as a last heads-up, even if a Pokemon dislikes a certain flavor, you can still feed it that flavor to max out the respective statistic, it'll simply take longer. Don't worry, it's easier than you think.

For best results, I would recommend waiting for the Mixing Master to show up at Lilycove as he never misses pings when mixing, but they three family members in the same building are also fine if you don't care about taking extra time and are good at the minigame.

Literally never played the minigame yet, this adds a level of annoying I wasn't really ready for.
Especially since I don't know how hard it'll be on am emulator.
In gen 6 you just mix the blocks and voila, you have blocks.

If you have access to Colosseum you can just nobrain everything with Sunny Day/Fire Blast because the berries you get from Mt Battle are busted.
