Tbh, I wouldn’t mind seeing cross gen evos return in future remakes, it’d make a lot more sense as remakes are essentially reboots of that generation/region. So if we ever get Gen V remakes in say, Gen XI, give some Unova mons cross-gen evos. Same if they ever do another remakes of any of Gen I-III

No, because of Eviolite.
You can't give regular Farfetch'd an evolution because Eviolite didn't work on it before and it would be weird for it to suddenly work now.
Galarian Farfetch'd can have an evolution because it was designed to already have one and as such can use Eviolite.

Doesn't matter, it was easy as shit to change the evolutionary trigger for Eevee to work with Leaf/Ice stones - eviolite is NOT easy as shit to balance, which means it's less likely to get adjusted, when as anon pointed out, they can just regionalise and evolve the regional instead.
