It can also denote willpower, or how durable a pokemon is once their external armor is removed (Kingler, Crawdaunt, as opposed to Bastiodon). It also appears to denote pokemon with high degrees of willpower or sagacity, and tends to be at least a bit higher on fatter pokemon.
Finally, many legendary pokemon, pokemon with arbitrary, set stat values, such as those designed to match with other pokemon (Eeveelutions, for example, which have the same numbers in different places; Leafeon has 130 defense mostly because that 130 needed to go somewhere, and a 130 defense Eeveelution didn't exist yet) or with specific numbers (Spiritomb Has 108 Defense and Special Defense because muh buddhism), or pokemon that have received stat buffs over the years to be less shit can pretty freely break from these trends as is appropriate. Additionally, Pokemon that run on some exclusive logic to determine their stats exist, as well as outright exceptions that laugh at your rationality.
