Ditto is only good against setup sweepers because it can switch in and copy the boosts. That being said, if it's not a threat to itself, the opposing Pokemon can just keep setting up and then kill Ditto.
The reason Ditto was everwhere during Dynamax meta is because literally anything could abuse absurd stat boosts, so being able to switch in and copy said boosts was really, really good. Now Ditto is more niche than anything else. The only reason I can see it being on the stall team OP posted is to threaten out setup sweepers to prevent them from breaking through the stall team.
