There's no such thing a shiny Applin or Flapple. The actual Pokemon looks exactly the same, the only difference is the color of the apple they're living in.

No. It just uses the apple in different ways depending on what it evolves into. Flapple uses the apple's rind as makeshift wings, while Appletun just eats it and uses a small piece of rind as a helmet.
