If you just want to nostalgia trip, the Indigo League and Orange Islands seasons are totally watchable, (yes even when Brock is briefly replaced by Tracy). But because I haven't watched much of the show beyond that, I can't comment on the rest of the anime. Apparently the Unova seasons are bad, and the Kalos, Alola, and very current season is good. Don't know how the Johto, Hoenn, and Sinnoh seasons hold up.
