First, do you want to try all the games? All the generations? All the regions? Those are all vastly different things. Maybe you don't care about playing them all and just want to play the latest games. Are you willing to emulate or only play on the original hardware? Do you have a hacked 3DS? If you play them in order, it is also possible to send your pokemon to later games to keep using them, is this something that interests you?
The games are divided by generations, with the latest games being generation 8. A new generation brings in a new region, new story, new pokemon and new mechanics. Sometimes, older games also gets remake; this not only gives the older region new graphics, but also updates the mechanic to the mechanic of the current generation. This is the main difference between playing the remakes over the original games.
Many in the fanbase generally see the generations in three "eras".
Generation 1 and 2:
