Gen 1 Rock Tunnel. You can't buy Revives until Lavender Town so you at least need to keep everyone alive and/or save your Rare Candies and use them to revive KO'd Pokemon.

Gen 1: Pokemon Mansion
Gen 2: None are memorable.
Gen 3: Meteor Falls
Gen 4: Mt. Coronet for the music alone
Gen 5: Chargestone Cave, Challengers Cave and Both Victory Roads. This gen has plenty of interesting dungeons now that I think about it.
Gen 6: The cave where you first meet Team Flare and Victory road. Also Sea Mauville in ORAS.
Gen 7: Brooklet Hill
Gen 8: I don't remember there being any dungeons.

Probably Mt. Coronet for its sheer size or B2W2 Victory Road for its variety. Gen V's dungeons are all honestly pretty neat aside from Twist Mountain which can go fuck itself. Also probably a bit of an underrated dungeon but Union Cave is pretty cool just cause of the multiple entrances and exits and Friday Lapras.
