So if you subscribe to the chinese zodiac theory, where would fire starters go after this? Would they just move onto zodiac signs?

Zodiac is fake because all of the remaining animals are explicitly quadrupedal except the snake. None of these work for plush or anthro designs so they're gonna break it.

That's definitely not true

That implies that no quadrupeds have evolved to be bipeds before. I don't even subscribe to zodiac theory, but I would believe that if it were real, Game Freak would take the ox design and make basically a minotaur out of it.

It makes sense to have left Ox (bull), Snake, Horse and Sheep behind since they double up with existing signs from other cultures.

Sheep is Aries, Ox is Taurus and Horse is Sagittarius (centaur).

Bull/Ox and Horse are also in the celtic animal zodiac. While Snake is in both Celtic and Native American Zodiac. Native American and Celtic also share double ups with Wolf, Deer, Falcon and Salmon.
