Since animals dont exist in the pokemon world how can the Pokedex catalog pokemon as "Mouse Pokemon" or "rat pokemon" since they dont exist

Birds and fish are referred to as "bird Pokemon" and "fish Pokemon". Bug Pokemon are referred to as "bugs".

They're categories for Pokemon just like how we use them as categories for animals.

To us "dogs" are Chihuahuas, German Shepherds, Poodles, etc. In the Pokemon universe, "dogs" are Snubbull, Arcanine, Furfrou, etc.
