That's because of tanning. If a man had pale skin it meant that they hadn't spent much time outside/in the sun and are hence unmanly, and vice-versa for women. You can see this paradigm in many cultures all across the world, including in modern day Japan. Genetic and textual evidence proves that Ancient Greeks were white and, if anything, lighter skin, hair and eyes were more common then than they are now in Greece.

I'm not talking about 'preference' (that's subjective and individuals are going to have their own preferences), I'm about the association with a traditional view of manliness. Women with tanned skin are viewed as tomboys, and men with tanned skin are seen as more athletic. Conversely a pale skinned man might be seen as feminine, but they could also be seen as more cultured or intellectual.

I don't think it matters if they had lighter skin or not. Usually people who bring it up do so as to prove something about whiteness. I don't think that's very fair since the Ancient Greeks had no comprehension of an overarching "white" identity. They viewed themselves as superior as freedom loving people surrounded by barbarians and despots. They didn't see themselves as kin with their northern neighbors in Illyria, Macedonia and Thrace nor with the people of the Near East. There was no brown or white identity.
