It's jumping back to prominence when Lucario is given a bus ride until the fight with Leon. They need to save some surprises for year 2 and Sirfetch'd is the perfect choice for that.

The Galar episodes are the only ones people get hyped for. The whole appeal is learning more about new Pokemon and how they fight since the games never show that.

No, it's case of them changing a character's Pokemon if one of the main characters has one.

Like how Korrina didn't have a Hawlucha in the anime.

Since Ash already has a Galarian Farfetch'd (that will evolve into Sirfetch'd), they made Graploct her main mon instead.

No it didn't. It probably had White Smoke. Torkoal can't even get Moxie as an ability, nor was it even an ability that existed in Gen 3
