Her character is mostly about feeling like a burden to the ones you care about, how did you miss that?
She literally flat out states that she is worried Looker is struggling financially because he takes care of her, and that's what's most of her arc is about.

I mean if I made something the fanbase would hate I'd also relegate her to a sidequest.

She's not in SWSH.
Also, she has nothing to do outside her story, what else do you want her to do?

No? That's only for one minor part of the arc, it's what propels her into becoming Essentia who's the main focus.
It's really not that deep, even if her guilt over thinking Looker struggles financially was actually anything more than a few lines of dialogue, it'd still be as complex as a Disney or capeshitter movie.
I guess when your entire life and interests revolves around Pokemon something like this must seem mindblowing lol

Gen 5 and 6 were the epitome of worldbuilding. Sorry Alolasomes and GalaRNA are acclimated to having any semblance of soul in their games cut.

Her actions as Essentia has barely anything to do with her character. She is for the most part completely controlled during those parts.

And not saying it is /that/ deep, just in comparison to other Pokémon characters.
