I suppose the Unova Tao dragon is an exception where 3 types might actually be needed in order to represent it: Dragon/Fire/Electric
But wouldn't this also needlessly complicate things if it became too common? Or am I overthinking the effect on the metagame it might have outside of STAB and extra resistances/weakness?
In short: If it were a "gimmick" limited to some lore mechanic then perhaps, sure. But if it were a permanent change like Fairy then no.
