So what's the actual logical explanation for why gym leaders conveniently only use one type and the champion and player don't? Are gym leaders forced to use one type as long as they're gym leaders? Would gym leaders have a diverse team if they were just normal trainers/the champion?

The Pokemon League probably requires it as a code to follow for being a Gym Leader in the region. Coinciding with this is how most leaders seem to be passionate about their type. Of course there are exceptions. Cheren obviously wasn't a monotype specialist before BW2 and Blue just used his regular team anyway. It's possibly somewhat loose and flexible depending on the circumstances.

It doesn’t seem to be enforced in most regions (see Blue or DP Gym Leaders) at least not strictly. It just so happens that the Gym Leaders are type specialists because they’re the best at what they do. In Galar specifically, however, it does seem to be directly enforced that you must be monotype to be a Gym Leader.
As far as the Champions, once you reach that high of a level you presumably don’t need to be held back by one type, though some will because they’re passionate about it. See Wallace for example, and while not necessarily specializing in it, Alder uses a lot of bugs presumably because he likes them.

Gym leaders and E4 can do whatever they want. It's just that most people who are accomplished specialize in one type of Pokemon because raising a wide variety of types is much more difficult. Raising Pokemon who share a typing largely means that standards of care stay roughly the same between species. It's a lot easier to care for 4 water types than a water type, fire type, grass type, and electric type.

I said it wasn’t enforced. Except for in Galar, where it definitely is because they have a leader for each type (in lore) and Marnie and Bede both directly succeed the positions as the designated Dark and Fairy type leaders respectively.

Characters make references to it from time to time. There's a reason most accomplished trainers use only a single type really. Very rarely is someone competent enough to raise a varied team and do so well. People like Cynthia and the protagonist are very rare. Even most champions pick a type to specialize in to some degree.
>Alder specializes in bug types
>Steven specializes in steel (but also subtypes rock the sneaky fucker)
>Lance specializes in flying
Hell even Leon has two type overlaps at minimum (two dragons and two ghosts). More depending on your starter choice. Diantha also has two rock types but she seems like they were trying to make her a Cynthia 2.0 to some degree and we know how that panned out.

Much more likely that you don't need to train a specific type to be a gym leader. Blue is one of those rare trainers that can train a wide variety competently. He has no reason to gimp himself by sticking to one set type, so why should he?
