I'm almost done doing exactly that.
I started with only planning on doing Johtomons in HeartGold, trading in exclusives from soul silver, then got all the kantomons from Leaf Green and Fire Red and transferred them up, then did the same with Ruby Sapphire and Emerald, and now I'm just 12 off having a living set of all the sinnoh pokemon.

Good on you anon, I decided to try it for the first time on Platinum recently, almost at Snowpoint and making good progress.

Remember you can use the fan-hosted GTS via mobile hotspot if there are any mons still unavailable in the games you have
