A pokemon inspired from a mouse and one inspired from a rock have very different interactions than mice and rocks have in real life.
So there's no reason why the interactions bewteen a pokemon inspired from a cat and one inspired from a mouse should mirror the interactions of those animals in real life

And the games often do anyways quite clearly in the pokedex entries. This is an issue that honestly, TPC brought on itself. The original vision always was that pokémon have an intelligence comparable to that of real life animals (except stuff like Lapras obv), but it didn't mean you couldn't form bonds of friendships with them. You can have a pet rat and be attached to it, and the rat will love you as well for taking care of him. It was simple as this.
When arrived the point of making an anime, they probably feared that children wouldn't be able to relate to pokémon in the animated medium if they acted like normal animals, so they decided to give them a more human-like behavior and make them emote with classic anime facial expression to give them more personality.

Wouldn't that be a huge strain on the ecosystem? Would there be enough food to sustain regular animals, pokemon, and humans in a region? The way I think of it is pokemon are fine with eating each other and some wild pokemon would try to eat a human if they could so it's just an accepted thing. Everybody eats everybody.

A Pokemon knows the names of its attack, nothing more, unless it's some 1000 IQ psychic type or a legendary (but only certain legendaries, Groudon, Kyogre, Dialga, Palkia, etc. are still mindless beasts).
