Is the SWSH main game actually worth playing or should I just grab a Legendary from the Crown Tundra to mindlessly skip through all battles?

It's worth it. With the exp. charm you'll be a little overleveled which means having a rotation of about 10 mons makes it a lot more enjoyable and allows for experimentation.

Play the game with 2 man party through first gym, 3 man party for Gyms 3-4, 4 man party for Gyms 5-8, 5 man party for wyndom and 6 man party for final boss

No, it's the worst in the series by far because it barely exists and most of what actually exists is obviously rushed and the characters are underdeveloped. Btw Hop is genuinely the worst rival by a fair margin.

Main game sucks ass but dont pick up an overleveled legend as the Gym leader battles and League are actually pretty well designed. Try to mash through the stupid ass dialouge ASAP but otherwise play the game normally.

This, I played the game normally at first but it didn't feel satisfying, so I immediately started over and used two teams
I'd rotate after each Gym Leader and I'd actually fall quite behind the level curve, but that also forced me to strategize and work with what I've got and what I can do, and it was legitimately one of the most fun I've had in any Pokemon game in a while
It peaked with Raihan, where I had to counter his weather with my own, fight two Pokemon at once, and stay afloat as best as I could
