it's a shame because design-wise I think Galarian forms are better, but they just have so little reasoning as to why they ended up that way
Stunfisk is the only one I can think of that has a decent reason to be the way it is

Most, but not all.
Zigzagoon for instance is supposed to be the original

The galarian birds were birds seen in Galar confused with the originals but they were never stated to be exclusive to the Tundra, they're just seen there first by the player.

Maybe being an Ice type in an area laden with Ice Type was less OP than becoming a Psychic type that conserves energy by not needing to flap its wings and can still freeze its prey with an OP af Psychic attack

If it uses Psychic power to float then it's not conserving energy especially since most birds don't flap the whole time their flying.

Alolan Forms were made exclusively for LGPE's sake so they could have "muh 151 (+ 2)" and make up for type distribution the region would lack in otherwise.

I'm pretty sure the implication is that the Galarian birds type changes have nothing to do with "adaptation", and are instead mutations from eating the fruit that grows on the Dyna Hill Tree.

It would make sense given the fact that articuno is the most shilled bird out of the three for the sole fact that it's the first one you encounter in the original r/g/b/y games, but it's also highly likely that gamefreaks writers wouldn't have considered this. But to be fair the whole thing with lugia was also only movie related, as far as I'm aware.

Not that it matters, they've gone on record saying all Pokemon Media is the same fundamental universe, only set in parallel worlds to avoid consistency issues with stories and characters.
