The only weakness that should be removed from Ice is Rock

All of Fighting's strengths make sense

They're good, so they beat evil (Dark)
They have super strength, and bending or denting metal is a common display of super strength in media
Same with Rock, martial artists breaking bricks and characters with super strength breaking rocks is common in media

- Resistances to Dragon and Ground

Bug and Fighting already have mutual resistances to each other

Acutally the reason why Fighting beats Dark is because a strong heart (courage) isn't afraid of Darkness & overcome their fears. Fighting type represent bravery, a strong mind... Hence Lucario.

That only gets suggested because Ground is the best offensive type in the meta (along with Ice and arguably Fighting) so it would really help Ice defensively, but "in lore" it doesn't really make sense. Why would Ice resist Ground conceptually?

Why is Ice not super effective against Water?

Why didn't Fighting resist Ice and Bug resist Psychic in gen one, because Normals and Psychics raped everything with no resists.

I at least understand why it resists Ice tho, in reference to water having a high heat capacity so that ice melts in water, and many aquatic animals having blubber and other ways to survive cold environments. Ice resisting Ground would go into the pile of the more confusing ones like this >>45236666, but I guess those already exist so yeah it would be fine. Just kind of weird.
