For someone who hasn't played a Pokemon game since Gold/Silver/Crystal, and has a Switch as their first Nintendo console ever since the first Nintendo DS came out, would it be worth getting Pokemon Sword/Shield or should I continue my 20-year retirement?

There are games you'd be better off playing before SwSh. These aren't the worst games you could pick, and actually reminded me a bit of GSC in the way they treat their story, but no, this might not be the best first choice.

swsh isn't nearly as bad as some stinkers here like to believe the campaign isn't the strongest but there is plenty of things to do in the game and the systems are more player friendly than ever
if you think you would enjoy a round of creature collecting, go for it

So the only thing to Pokemon is just catching?
Not walking with them in the overworld, using them in contests, taking pictures with them, teaching something new with the move tutor, riding them instead of using the bike, rematching the E4 in the postgame, showing to an NPC that wants to see it, or using in competitive battles?
Oh, right. I forgot that nu-Pokemon doesn't have half of those things. Shame every game since Sun and Moon has only strived to cut them out.
