Why did these feel like the final pokemon games? Everything about alola has a sense of finality to it. Maybe it was because of the 20th aniversary?

Because it was the final games on portable hardware and also the final games with the entire roster coded into it.
As for "final" I didn't get that feeling, but they absolutely were a book-end to their Portable hardware developments.

If I were to show someone what pokémon is, and how it progressed I would let them play:
1.Red
2.HeartGold
3.UltraSun

Bc that is when you get the most differences, in fact I believe we are only at the 3rd Generation of Pokémon:
1st. The original Led & Guleen
2nd. Improvements on battling, tiles, items etc
3rd. Right now. 3d overworld encounters with humans with more personality, and bonding games with your mons. More cinematics, lore and handholding. More tuned for meta-game preparation etc.
