There are plenty of different types of gimmicks, but try and make the best one you can think of.

Hard Mode: Take a pre-existing Pokemon and turn it into a Gimmick-mon

A Pokemon who will always transform into a typing that is super effective against the opponent, even upon any switch-in's. They can only learn Hidden Power that changes typing with the Poke.

Every turn, it will get an attack boost. However, for every boost it gets, it will have a higher and higher chance of disobeying the trainer, rising to 75% by +6.

Gimmick mon idea: Luvdisc
Upon switch-in of any Pokémon, Luvdisc infatutates a Pokémon and lowers all their stats, and if they are unable to be infatuated, Luvdisc paralyzes and confuses them instead.
Luvdisc gets a complete overhaul of stats and abilities, losing its water-related ones and gaining new ones related to love.

You could also just change it so Luvdisc's ability is that attract can affect any Pokemon, including same gender and Pokes with no gender.

That's sadly not competitive enough to help Luvdisc's glaring issues.
In order to be able to put any pressure and hax its way into competition, Luvdisc needs to be able to do it outside of its own turn.

You might have to either change Hidden Power (If you decide to go with the Unown re-work route) or invent a move exclusively for this one Poke where it's a move that is super effective against it's opponent and ignores abilities, so stuff, like levitate for Eelektross, doesn't work.

I'm not sure off the top of my head if there's any Pokes with no weaknesses since Fairy was introduced.

I'd say the bottom row aren't really "gimmick" mons. Basculin is just a visual tweak, and Mimikyu's ability while good is no more gimmicky than gen 5+ Sturdy. Meows tic is controversial because while they do have different move pools and abilities, I'm of the camp that believes they (as well as several other post gen 6+ mons like Lycanrock are just branched evolutions ala Gardevoir/Gallade or Tyrogue. GameFreak simply got paranoid about there being a thousand Pokemon and have been using every trick in the book to prevent the number from going up. I'm sure if they could go back in time they'd have made Gallade "Gardevoir Sword Elbow Forme" and so on.

As for my own Idea for a gimmick mon, a Pokemon that evolves on level up, but evolves back to the first stage next level up, and back and forth every level up. Both Pokemon have the same BST but wildly different spreads and abilities.

It's a ridiculously strong move, like 150 BP with no downsides, and the mon has stats minmaxed to make it as good at using the move as possible.
Its ability only boosts that one move, and it has a signature item that also boosts that one move.
Also, make it a horse so it can be a literal one-trick pony.
