>>45418698It's defenses are pretty average even fully evolved (71/85/95). It learns a few support moves that can help with its bulk, but you don't really need to try so hard with it. Vanilluxe is your "spam Ice STAB" Pokemon.
It only really became useful in later games- Gen 6 gave it a staple move in Freeze-Dry, Gen 7 gave it Snow Warning, and then Gen 8 followed up with Aurora Veil.
That said, I'd say stick with it. Vanilluxe isn't the best and it's movepool is pretty shallow but it's fun to have around regardless.
