Assuming we're just talking about the characters, Takegarou happened. If you look at all the things she's drawn and characters she's designed, it's easy to see her influence in Gen 8's characters and wonky anatomy in the official artworks.

I feel like characters get more and more quirky and overdesigned as the time passes. I think Gen 6 was the time when it really started showing but it actually began with Gen 4. At this point some characters look like they came from Inazuma Eleven or Danganronpa.

And Sugimori did an interview for one of the Gen VII guide books where he talks specifically about the UB's and the process the designers underwent to create them, said he largely told the designers to ignore the traditional design rules they use for other pokémon, as they were meant to be extra-terrestrial thus were allowed to look non-standard. He went on to say they still were just pokémon, but from another universe.
