Start with Gold/Silver/Crystal. Don't play FireRed/LeafGreen first, or you'll have a hard time downgrading back to GBC palette. I guess you can play HeartGold/SoulSilver, if you want to lose all of the soul of Gen 2 for a bunch of QoLs.

After that, it's really about picking your poison. If you want to jump to the next actual milestone in the franchise, try Sun & Moon. Whether the changes are positive or negative is up to you, but at least it'll be a slightly different game.
