They're a reference to how people mismatched fossils back in the 1800's and presented them as complete animals (several dinos have been put together backwards initially and the Platypus was rejected by European science, thinking it was several different animals stitched together to try and embarrass scientists).
Shock horror, we get areference to that part of British natural history with quack scientist with access to revivication technology and a grandda who'd told her blatant lies instead of telling her the fossils she kept finding were worthless and couldn't be revived.

If anything, being able to mismatch completely different creatures together and produce a living thing is more impressive than just reviving a fossil normally.
