The biggest problem with Let's Go is the forced motion controls for capture. It would be one thing if they worked, but most of the time if the Poke is moving on the screen you've got at most a 45% chance of the ball actually going where you're trying to throw it. Because the vast majority of trainers are not rebattleable the only real way to grind is with catching, which is shit because the ones that give enough experience points to not mean nothing to anyone over level 10 are the ones than move.
