Zippered and sewn mouths (and limbs) are a staple horror aspect anon. Banette is just a possessed doll, similar to how Shuppet is a possessed teru teru bozu/rain doll. The mouth is there to make it scary, because you don't know what it's hiding under there. It could just be the face of the doll or nothing under it, or it could have a grotesque tongue and tentacles.
