It saves on production costs immensely to keep the games closer to the originals, GF knows they need all hands on deck in their band camp of incompetence so keeping the remakes closer to the classic-style Pokemon games accommodates that better than attempting to completely change the game just to be more accurate to the post-Yokai Watch style. I mean honestly, do you really think they'd give the overhaul to Sinnoh and not their golden-goose Kanto? GOrmies are the same crowd that eat up BOTW and empty open world in dredges.
If they planned on deviating from the core formula so much for remakes then Let's Go wouldn't have been the way they were. You can't really use the kiddy excuse either because Fortnite/GTA live rent free in zoomzoom heads, it nets GF more profit to appeal to the lowest common denominator that doesn't usually get involved in console games, i.e, the GO audience.
