Pokemon "official" dimensions are just suggestions that get ignored all the time. Weights are even stupider. For Steelix to only weigh 800 pounds he would have to basically be hollow with a paper thin steel skin.

and probably more, all have the pokemon scaled to their dex heights

TPC also released an World Scale figures based on their dex heights

Yeah, and everything you didn't mention doesn't scale them to Dex size. The anime, and official games in particular are the two biggest parts of the franchise and neither give a shit about scaling things right.

Also dex dimensions are fucking stupid anyway. Is there really no variation within a population of a Pokemon species?

it kept contradicting the games by shitting on its mechanics all the time anyway

and LGPE is an official game by Gamefreak. it's just that SWSH the team that was handling SWSH didn't give a fuck about scales and neither is Ohmori
the 3DS having smaller scale models probably because of hardware limitation (which already had trouble having 4 pokemon in the same battle because of the piss poor optimization)

For all we know, our starter mon could have been a baby hatched only a week ago. These dex heights are also vague on what's being measured, what's the average height and if the Pokemon is fully grown.

It's an average, of course there's variation. Go had from day one and there's been a few npcs in the main game who mention it including a dude at Lake of Rage who asks you to bring him the biggest magikarp you can catch.

Meganium is ok but Chikorita is a really ugly design. So is Cyndaquil, however. Totodile is honestly the only good Gen 2 starter.

Pokemon were supposed to all be diminutive, they were pocket monsters. Only in gen 3 (with maybe the sole exception of steelix) did they start playing around with making them gigantic. If mons like charizard had debuted in like, gen 5, he would have been like 7 feet tall.

It's actually the heaviest starter and the 2nd tallest after Feraligatr (what a chad), but it still feels like Torterra should have been a good deal bigger. I think Gamefreak could have easily made it a meter taller (same height as Arceus & Reshiram) and double the weight (to be between Zygarde-Complete and Copperajah)
