They just made EVs easier to get. Instead of playing a stupid minigame you just buy vitamins and can max them out.

Vitamins are still slower and less cost efficient than hordes. It only took 3 minutes at best to train a hole party whereas you have a limiting factor on how many vitamins you can buy before grinding to get more.
Super Training itself is the kind of nice minigame thing Pokemon sorely lacks nowadays, even if it wasn't particularly great it still had good mechanics and as a feature was still useful because you could reset EVs anytime, anywhere.

It's not even hard to get money in swsh. Just do the Luxury ball thing or sell the stuff you get from the digging duo. It's way faster. Hell you can even do the Gmax Meowth thing or the tournaments in general.

If you think they removed it for "balance reasons", you're sorely mistaken.
In Sword and Shield, you can catch level 75 box legendaries before the first gym.
They got rid of amie+super training because:
1. They'll buy it anyway
2: To keep Gen 6 "unique"

That's not really an argument. SWSH has plenty of other money sinks that require you to dump most of your money, especially the ones you get from grinding it like you suggested. The most notable is clothes which takes about 18 E4 runs with GMAX Meowth if you're male, and over 21 if you're female. The Star Tournament nets you an easy million the first go, but all of it is easily expended from one shop.
The fact stands that SWSH requires more grinding than XY/ORAS did for vitamins. In those games, the setup was minimal and allowed you to do an entire party in one go within 5 minutes at worst, or 12 battles. If you take the minimal effort to optimize your gains, you can easily cut that time in half with Pokerus and do it in about 3 minutes with 6 horde battles.
No matter how you spin it, SWSH still ends up being slower by virtue of requiring money. The Digging family is a great resource, but even using them once is still slower than just doing hordes which actually felt pretty engaging and fun.
