Firered / Leafgreen are probably the best place to start. All the goodness from gen 1, but without all the weird shit that comes fro it being the first try at making these. Afterwards, you can go on to heartgold/soulsilver. Whatever you do, don't start with these (or gen 2 for that matter), the late game is pretty much built on Gen 1 nostalgia.

If that's not an option or you just want to not start at the beginning, you can pick up emerald or platinum as your first game just fine, you just miss some context for the series.

FR/LG > HG/SS > Emerald > Gen 4 > Gen 5 > so on if you're trying to get a full experience. If you just want the single best game, it's HG/SS.

Well I say don't start on either the second or fourth if you plan to play from the middle but if you choose to play the first game before the others (I recommend) and you intend to choose Charmander then go fire red since it gets dragon rage and is op in fire red early game

I'd say either Crystal or Ultra Sun/Ultra Moon. 3D pokemon games peaked at USUM and Crystal is the comfiest and most soulful game in the series, maybe aside from Heart Gold/Soul Silver.

I also prefer the music and the sprites, but more than that I love having the Odd Egg (Magmar, Jynx and Electabuzz are very fun team members) and elemental punch TMs, along with a rather uncomplicated duplication glitch which circumvents the single-use TMs. Not having the Physical/Special split also makes for a unique experience (I'm not the antiPSS anon but I do think it has a certain charm).

Why? The split might be something to keep in mind, but if you can remember type matchups in the first place this is hardly an obstacle, and you can easily play pokemon without ever concerning yourself with stats

Play Emerald, Platinum, HeartGold/SoulSilver, Black/White, Black2/White2. Order doesn't matter besides that last one. All the other main games are not worth playing. At that point you should also be tired of those games anyway, if you still want more Pokémon after that play the spinoffs: Blue Rescue Team, Explorers of Sky, Super Mystery Dungeon, Rescue Team DX, the Ranger trilogy, PokéPark and PokéPark 2.

Unironically SWSH, you won't find another game with the same amount of QOL and Pokemon diversity that appeals to newcomers. You can buy the DLC and Home to be set to have the most immersive experience in a game you'll find to date.
The sheer amount of detail and gameplay they packed onto one cart is astounding. I haven't seen characters with as much soul and challenge put into them since the Alola games.
