Vaporeon needs a bathtub full of water or a swimming pool to stay hydrated. Expect your monthly water bill to be high

Espeon's fur is made to sense opponent's moves. Have a neckbeard palace, like /vp/ users always have, and it will be crippled for life.
Umbreon has toxic sweat you don't want to touch.
Leafeon is known to have very sharp leaves. It will cut your furniture easily.
Glaceon will turn everything into ice since she's got a low body temperature.
Sylveon will cuddle you to death or stick its penis inside you.

I would say Jolteon and Flareon would be the most dangerous to look after, but they also seem like some of the most useful.
Jolteon could be used to charge and power electronics. Power outage? No worries, Jolteon can probably do something about it.
Flareon can heat food, and provide light in the form of candles, and is the ultimate snuggle buddy.

The easiest would be Leafeon, provided you live somewhere sunny.
