Gravity at the end of the day is a gimmick, and not an easy one. I created the team to be able to deal with the meta while still taking the gimmick into account somewhat. You can just make a meme team but it needs realistic options if you want to really use it and win with it regularly.
If you can't activate Gravity, all the moves you are talking about will miss and lose you games, and it's not always easy to activate Gravity or take your Gravity enablers in some matchups. So it's a more rounded team since the anon who asks about the team said he was a noob and so giving him a team that can function more easily and well is better than a full gimmick team which asks you to always overpredict and know everything about the meta to have wins. At his level, he won't have the luxury to work more for the team than the team will give him in return.
And I took Blacephalon and work around it but, like you said, we could have went with a Sun team, with Torkoal + Venusaur + Charizard + Grav setter and other mons to patch issues the team can have, and work with that instead with the moves you gave, yes. There are plenty of type of teams you can make with the idea, mine was one of them but you can come up with yours too.
